I do love arugula
I love arugula. I love arugula anywhere I can get it and order it anywhere I can find it: tucked between two pieces of bread as the L in a BLT, tossed in a light dressing and topped with shaved parmesan, or sitting under a piece of salmon or steak. I love the taste--that fresh, peppery, green taste--that belongs to arugula only. And I love that, if I close my eyes, the flavor can take me back for a moment to that piazza in Florence where I had for the first time in my life a pizza topped simply with arugula and prosciutto and shingles of parmesan cheese, a pizza to which every pizza I have eaten since pales in comparison.
